Ingredients:

2-3 ripe bananas, mashed

1/2 cup crushed pineapple, drained

1/2 cup shredded coconut

1/2 cup chopped macadamia nuts (optional)

1/3 cup melted butter

1 teaspoon vanilla extract

1 cup granulated sugar

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

2 large eggs

Instructions:




Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.

In a mixing bowl, combine the mashed bananas, crushed pineapple, shredded coconut, and chopped macadamia nuts (if using).

In a separate bowl, mix together the melted butter, vanilla extract, and sugar. Add this mixture to the banana mixture and stir to combine.

Add the eggs to the banana mixture and mix well.

In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Be careful not to overmix, as this can make the bread tough.
