Ingredients:

1 box brownie mix (plus ingredients called for on the box)

For Buckeye Filling:

1/2 cup butter, softened

1/2 cup creamy peanut butter

1 1/2 cups powdered sugar

1/2 teaspoon vanilla extract

1 cup semi-sweet chocolate chips

2 tablespoons creamy peanut butter

Directions:




Prepare the brownie mix according to the package instructions. Spoon the batter into a mini muffin tin, filling each cup about 2/3 full. Bake as directed on the box. Let cool in the pan.

For the buckeye filling, beat together the softened butter and creamy peanut butter until smooth. Gradually add in the powdered sugar and vanilla extract, beating until creamy.

Roll the peanut butter mixture into small balls, about 1 teaspoon each. Press a ball into the center of each brownie bite, flattening slightly.

For the chocolate topping, melt the chocolate chips and peanut butter together in the microwave or using a double boiler, stirring until smooth.
